Introducing the Happy Five

It has been almost two years since launching my blog, so I have decided to revamp my monthly Fave Five. My Fave Fives was a feature I added to my blog in May 2022 as a way to share some of my favorite things. This included a new restaurant, a recipe I am loving, a new beauty product, a Peloton class I think you should try and something that makes me happy. 

After some time writing this feature, I learned that these weren’t really my “Fave Five”. They really are items that make me Happy. So, I’m transitioning this monthly feature to the Happy Five. I am also changing it up a bit. Now I am going to feature the following each month:

  1. Recipe I am making for meal prep
  2. New beauty product I’m using
  3. The latest book I read
  4. Something that Brings Me Joy
  5. An EA tip that can help you to be successful 
Spicy Cashew Quinoa Crunch Salad in a Jar

This month’s featured recipe is Olivia Adriance’s Spicy Cashew Quinoa Crunch Salad in a jar. I’m loving this recipe because it helps me with my meal prepping for multiple weeks. it is also DELICIOUS and something I have made on repeat since I found it on Olivia’s Instagram. Some things I have learned that might be helpful for you if you are planning to make it yourself. 

  1. It is so easy to prepare. First, I make the shredded chicken in the slow cooker. This lightens my load on prep work and dishes. Second, I double up the spicy cashews so I have them prepared for multiple weeks. Finally, I don’t cut up all the cabbage so I can keep it for a second week. 
  2. Make sure when you cut the cabbage into very small and thin pieces. I notice that if I don’t take my time to cut the cabbage thinly, it can be bitter and doesn’t absorb the tasty dressing. 
  3. Since I take this to the office, I shake it up and eat it directly out of the jar versus pouring it out in a bowl. 

The salad dressing is so delicious, that I also used it as a sauce for my steak bowls I made for dinners.  If you are looking for the ideal jars, check out THESE. I also love to make them colorful with these fun toppers.

Yes, I did get influenced by Hailey Beiber. I never thought I would say that, LOL. The Medicube Booster-H is the new viral skincare device that helps give your skin that youthful glow and elasticity bounce.

Persuader: Jack Reacher Story

One of my goals for 2024 is to read a book a month. This month, I’m reading Persuader by Lee Childs. It is part of the Jack Reacher series. I’m totally addicted to the Jack Reacher series on Prime Video and when it was announced that Persuader is going to be the next book as part of the series I had to start reading it. I haven’t completed it but I have to tell you it is a page turner. I can’t put it down. In fact I’m so hooked I almost missed my bus stop, LOL. 

What I love about the Jack Reacher series is that you don’t need to read them in order. Although I do recommend reading Killing Floor first. It helps to set up Jack’s unique lifestyle. But outside of that, you don’t really need to read them in order. 

While I’m talking about Reacher, I highly recommend watching the show on Prime Video. It’s action packed and totally addictive.  There are only 2 seasons and only 8 episodes in each season. Plus, they go really fast, so fast you’ll be sad when it ends. 

This Brings Me Joy and I Think it Will Bring You Joy Too

Since we are talking about books, I want to share my Kindle Oasis with you. I absolutely love my Kindle Oasis. The sleek design makes it easy to hold when I’m commuting on the bus. Especially since I’m holding Brutus. I also love the paperwhite style which makes it easy to read on a sunny day. The Kindle Oasis also has a soft backlight so you don’t need lights at night to read while in bed. I realize it is a bit pricey at $199 but it is worth every penny. Especially if you are an active reader. Also, the nice thing about the Kindle Oasis is most public libraries have digital books available for you to rent. 

EA Tip of the Month

As I share in my post HERE, I love being an executive assistant (aka EA) and I find the skills to be a successful EA translate to being successful at home and at your job no matter what you do for a living. So, this month I am sharing my most popular question, “how do you get everything done?” 

Drumroll please…

Put it on the calendar! That is my big secret. I put everything on my calendar like an appointment/meeting. Even my personal stuff. Check out a typical Saturday. 

As you can see, I put in time for the Peloton, grocery shopping (which I do online), work on my blog, and so on. By the end of the day I’m free to spend time with friends, family or quiet time at home. 

By putting time on my calendar, I get reminders to do it and don’t snooze the notification until it is done. When I dismiss the notification, it’s like checking it off a “to do” list. I also like putting time on my calendar because I know how much time I need to spend on the task and it is also on my phone which I carry everywhere. I also love that I get my notifications on my watch, which guarantees me not to miss a task.
